The Function of fat in your diet, simply put…

Most people look at me and think wow you’re skinny chef, that’s not right.  Anybody who has sat and had a meal with me can testify-I eat, and I eat big bowls of food at that-being that I don’t got a lot of body in the way of keeping this belly from expanding to make room :)   What most people wouldn’t know is that probably 45% of my diet comes from fats. 

Simply put we need fats! They are our friend, you can pretty much say every cell in our body contains fat in its structure.  Some of those fats cannot be synthesized by the body so it’s really essential for you to aquire these fats from food sources.  Also there are certain vitamins like A,D,E, and K that are fat soluble, meaning you need fat to help absorb and carry them through out the body. Plant based food sources are prefered, and then animal based.  But hey every body is different so play your game as you see fit-I myself eat both.

I prefer fats from avocados, and nuts first and foremost-almonds,walnuts, pecans, and brazil nuts-and am constantly munching on them before during and after a meal.   Remember! It’s good to soak your nuts and seeds over night, this helps to activate the living properties of the food.   To put is simply you take an almond and stick it in the dirt nothing grows, it will stay there as is dormant.  You take that same almond stick it in the dirt and soak that ground with water, over time that seed will sprout and grow into a tree.  Soaking also helps to get rid of tannins from the skins of the nut, and word on the street says that soaking nuts and seeds helps to get rid of enzyme inhibitors that can be found in the skins of tree nuts.  I’m a chef, not a scientist so I haven’t looked under a microscope to see if this is actually true or not, but what the hell I’m game to believe this :)

I’m also sucker for yogurt(home-made) and quality cheeses(preferably goat or sheep) a nice 3 month old Manchego, or a goat’s milk gouda from Cypress Grove called Midnight Moon. 

Coconuts are also a wonderful source of fat for the body, super high in HDL cholesterol(the beneficial kind) along with some super good medium chain fatty acids that are super easy for the body to break down and absorb to be used as energy.  Medium chain fatty acids are what breast milk is made up from fyi…
